I think I will parboil this next time. I'm not a fan of crunchy broccoli and I don't think my daughter really cared for it either. Other than that it was fine. My son who is 1 loved it.
Parmesan Broccoli
4 cups of broccoli florets
1/4 cup of good parmesan cheese
2 tablespoons extra virgin olive oil
salt and pepper to taste
- Preheat oven to 425 degrees
- Toss broccoli, oil, cheese and salt and pepper
- Spread on a cookie sheet
- Roast for 15 minutes
