Bacon Eggs Benedict and Banana's Foster French Toast

 

I do not like ham, but I really like poached eggs hollandaise, and super crispy bacon, so we had bacon eggs benedicts. 

The Hollandaise was:

  • the juice of a lemon
  • 2 eggs yolks
  • 1 stick of butter, melted
  • a couple good shakes of cayenne pepper
  • a couple good shakes of paprika
  • salt
  • pepper
Fill the cup of a food processor with scalding hot water, and let it sit in there while you make the sauce. Melt the butter. Whisk the egg yolks together. Once the butter is melted, dump the water out of the food processor. Add in the egg yolks, lemon juice, and all the seasonings. Pulse together. Slowly pulse in the melted butter, until smooth. Adding the hot water to the food processor heats it up, which helps to cook the sauce without having to use a double boiler. Serve it over a poached egg, and super extra crispy bacon on a sour dough English Muffin. 


French toast is one of my favorite meals. I decided to try making a bananas foster type French toast.

  • Brioche bread
  • 2 eggs
  • 1 cup of milk
  • some nutmeg
  • a good amount of cinnamon
  • a splash of vanilla
  • 2 bananas sliced
  • 1 stick of butter
  • 1ish cup of brown sugar
  • rum extract(you can use real rum, I'm just scared of cooking off alcohol)
Whisk together the eggs, nutmeg, and cinnamon. Once that's mixed together, whisk in the milk and vanilla. Doing this emulsifies the cinnamon and nutmeg better. Dip the brioche in the custard mix, then cook in a medium/low skillet for a couple of minutes on each side. 
Melt the butter in a sauce pan, stir in the brown sugar. Cook on medium heat until it melts together. Add in some rum extract, and some vanilla extract. When the caramel mixture starts to get syrupy, add in the sliced bananas. Cook for another minute or so. Serve over the French toast. You can eat this banana caramel on basically anything you want. It's also really good on ice cream, pancakes, and waffles.
